I decided to attempt some blueberry English muffins. I used my usual fresh milled English muffin recipe. Instead of the 300g of milk, I used 150g of milk and 150g of blueberry juice. Then, during the stretch and folds, I added some dried blueberries. These turned out fantastic and I will be adding these to my Saturday market rotation. I am so excited, yet nervous, for my first ever Saturday Market!!!!!! May 23 is coming quickly. I have gone over and over my baking schedule and prep timing in an attempt to not overwhelm myself. I want everything to be fresh and perfect. However, I know there will be some hiccups, and that’s ok. Well, the key lime pie cake from last week was a huge success. This week, we are turning them into cupcakes! I halfed the recipe and used 195g of flour. I made the graham cracker crust first, baked it for a few minutes and then added the cake mixture. These were topped with buttercream frosting, graham cracker crumbs, and lime zest. So good! I have really been working hard to perfect my bagel recipe. Each time I make them, there are little tweaks I try to make them better. This go around, I am adding inclusions. Three will have blueberries and three will have strawberry powder. I have found dried blueberries that I will soak in boiling water prior to using them to rehydrate them. I made some yummy fresh milled sourdough cinnamon rolls, again, this week. They are just too good! The brioche dough mixed with the stiff starter and fresh milled flour is perfection. It’s time for Easter baking! We headed to my sister’s for the celebration. I was responsible for rolls and a dessert. First on tap were some Soft and fluffy sourdough dinner rolls.
